Daucus carota supsp. sativus is the garden carrot. Carrots are root vegetables and originate from Persia. They produce feathery green foliage, and develop an edible taproot. They are usually orange in colour, however other cultivars now produce carrots of different colours such as purple, black, red, white, and yellow. As with most types of vegetables there three main types – early, intermediate and main crop. By selecting each of the varieties, carrots can be available most of the year. Carrots are best planted in light, stone-free soil that was not manured the previous year, or the roots will fork. ‘Purple Dragon’ produces tapered carrots which are purple in colour, and with a yellow orange flesh.
